Vibrant Taco Bowl

A Taco bowl that looks and tastes Amazing

This Taco bowl uses many different veggies to create a colorful array of tastes. With toppings like pickled onion, roasted peppers, green onion, and others, the flavors will explode in your mouth. I hope you try this healthy dish, and even add your own additional toppings!

To decrease the preparation time needed for this dish, ingredients like roasted peppers, and pickled onions can be prepped in advance, as well as chopping up produce.


Ingredients:

Main:

  • 1 Pound Ground Beef or Turkey
  • 1 Packet Taco Seasoning
  • 15 oz Can of Black Beans
  • 1 Large Tomato
  • 15 oz Can of Corn
  • 6-8 oz Box of Mexican/Spanish rice
  • 1 Head Romaine Lettuce
  • 1 Lime
  • 2-3 Bell Peppers (Red, Orange, or Yellow)
  • Sour Cream
  • Cilantro
  • Green Onion

Optional:

  • 1-2 Jalepenos
  • Pickled Red Onions
  • Taco Sauce
  • Other Taco Toppings
  • Shredded Cheese

Directions

Roasted Red Peppers (Can be done night before):

  1. Preheat oven to 450°F
  2. Line baking sheet with Aluminum foil
  3. Core and slice bell peppers in half (leave jalaepnos as is)
  4. Place bell peppers cut side down and optional jalapenos on baking sheet with room in between
  5. Roast in oven for 20 -30 mins, flipping the peppers halfway through (peppers will have some black charred bits when done)
  6. Remove from oven and quickly transfer peppers to bowl with ice and water
  7. Peel bell peppers and slice (jalapenos will need to be cored and peeled at this point)

Produce Prep:

  1. Chop lettuce, tomato, green onion, and cilantro to preferred size
  2. Cut lime into wedges

Cook:

  1. Start cooking rice according to box instructions
  2. As rice is cooking, cook beans and corn on low-med heat in separate saucepans until cooked though, seasoning beans to taste
  3. After beans and corn are cooked, heat another pan on medium-high heat
  4. Cook beef/turkey until cooked or browned and add taco seasning according to instructions
  5. Finish all cooking and begin assembly

Assemble and Serve:

  1. Use a bowl and start by plating rice, beans, corn, lettuce, roasted peppers, and tomatoes into seperate parts of bowl, leaving the middle open
  1. Place cooked taco meat into center of bowl
  2. Add green onion, cilantro, sour cream and lime wedge as garnish (pickled onions, taco sauce cheese)
  3. Dig In!

Tips: Use gloves while peeling and coring Jalapenos. Reduce or emove Jalapenos for spice intolerance. Add more topping or veggies as you see fit.
